Singlefile is a boutique, family run winery dedicated to making single vineyard wines from select sites in Western Australia's expansive Great Southern wine region. Their name pays homage to the geese who waddle in single file around the estate and the Latin on our crest translates to the pursuit of excellence - a principle they try and live by every day.
Singlefile are continuing to draw high praise with their wines now recognised among the very finest made anywhere in Western Australia. Boasting an impressive portfolio of wines, it's not surprising to see Cabernet Sauvignon, Chardonnay and Riesling leading the charge for this outstanding winery.
Winemaking: This wine is a blend of 91% cabernet sauvignon, 6% merlot and 3% malbec. The fruit was picked and sorted in mid April 2017. It was cold soaked in small fermenters for twelve days before undergoing an extended and gentle maceration allowing for the softening of the tannins. Forty percent of the wine was matured in new Bordeaux oak barriques. The balance went to one year old (30%) and two year old (30%) Bordeaux barriques for ten months maturation before blending.
The Wine: This wine displays bright and lifted aromas of dark berry and bay leaf, and gentle oak support. The wine is effortlessly mouth filling with juicy red fruit flavours balanced with acidity and gentle fine grained tannins which lead to a long finish. It is well suited to red meat dishes such as a roast leg of lamb with garlic and herbs. It will continue to develop in the bottle for eight to ten years.
