Yabby Lake Vineyard was established by the Kirby family in 1998, in Tuerong, which is located in the northern part of the Mornington Peninsula. Over the past decade, Yabby Lake has built a reputation for single vineyard Mornington Peninsula Chardonnay and Pinot Noir of great purity and character.
Led by the highly regarded winemaker Tom Carson, Yabby Lake's philosophy is to craft wines that speak of their site and their season in which they were grown. Yabby Lake believe it’s this attention and care in the vineyard that is most critical to allowing this expression.
WINEMAKING: The grapes were fermented in a combination of open and closed fermenters with up to three weeks total time on skins (some whole bunches). The wines were then pressed and transferred immediately into barrels for malolactic fermentation. Remained in barrel for a total of 17 months (100% French, majority 300L hogsheads) and during maturation was racked three times.
TASTING NOTE: The 2015 vintage has wonderful balance and intensity of flavour, it has great appeal now but will last the distance. Bright dark berry fruit and lifted spice dominate the aromas, with underlying scents of pepper and subtle French oak. The palate is plush and silky, loaded with dark fruited shiraz intensity. Fine structure and excellent concentration.
