Out Of Step is the Yarra Valley venture of David Chatfield and Nathan Reeves, who back in 2012 chose Sauvignon Blanc as their foundation variety - at a time the variety was arguably at its lowest point in popularity within the region. Over the ensuing years Out Of Step has played a substantial role in re-defining Sauvignon Blanc within the Australian wine landscape; consistently producing interesting and complex single-vineyard offerings.
A new vineyard for Out of Step in the series of Sauvignon Blanc’s. This is another vineyard in the upper Yarra at 130m above sea level on grey soils that make for a powerful but less fruit driven style of Sauvignon Blanc. It was planted in 1995 with north-south rows on a north facing slope. Hand-picked fruit that was pressed to barrel and then wild yeast fermented and matured in used French oak hogsheads and barriques. Partial MLF, racked, settled (but not fined or filtered) and then into bottle. No additions of any kind other than sulphur dioxide. Sits at 12.5% alcohol.

Winemaking: Hand picked, pressed to barrel & then wild yeast fermented & matured in 5% new/95% used French oak hogsheads & barriques. Partial MLF, racked, settled (but not fined or filtered) & then into bottle. No additions of any kind other than sulphur dioxide.
