Their ethos is ‘great wine first, Champagne second’. Bollinger’s charter includes use of first press only, barrel fermentation and storage of reserves, ‘aromatic bombs’ in magnum under cork. Long lees-aging is critical: 4 years for Special Cuvée and up to 12 for the precious R.D. All prestige cuvées are hand crafted at every stage.
Over five generations the family have acquired vineyards in highly prized Grand and Premier Crus, supplying 65% of their own needs. Their vineyard sustainability was recognised in 2012 with a certification of ‘High Environmental Value’.
