Chain Of Ponds deserves to be mentioned alongside them, with their 'Black Thursday' Sauvignon Blanc consistently delivering high quality drinking for the best past of two decades.

This 2018 Chain Of Ponds Black Thursday Sauvignon Blanc is bursting with tropical paw paw, guava and melon flavours balanced by notes of passionfruit, hints of cucumber and split pea. The rounded tropical fruit palate is supported by a tight citrus acidity that gives a zesty, crisp finish. As with most Adelaide Hills Sauvignon Blanc, this will be best enjoyed in its youth.

The Chain of Ponds winery was established in 1985 on the outskirts of Gumeracha, approximately 4km from the original township. While vineyards have been part of the makeup of the area since colonisation, the Chain of Ponds Winery was the first major planting of any note in the northern area of the Adelaide Hills region. Four thousand vines were initially planted, covering 9 varieties, consisting of 470 vines of each variety, which was further increased with an additional 150 acres planted in 1989. The first vintage being in 1988.

The winery has more recently extended the vineyard boundaries to source fruit from a much broader area of the region, which has added further complexities and subtleties to the wines themselves. Chain of Ponds produces a wide range of products and varieties which are perfectly suited to this cool climate region. The white varietals include Sauvignon Blanc, Pinot Grigio, Semillon and Chardonnay. The reds include popular Australian varieties: Shiraz and Cabernet Sauvignon, as well as emerging and exciting varieties for the region: Pinot Noir, Sangiovese, Barbera and Nebbiolo.

VINEYARD: Sourced from 4 vineyards stretching almost the entire length of the Adelaide Hills. One parcel was picked early to maximise the herbaceous, apple and cucumber notes in the wine. The remaining parcels were picked to maximise the balance of natural acid, tropical flavours and mild citrus notes. All parcels were picked in the early hours of the morning to allow the previous day’s heat to dissipate prior to being harvested.

WINERY: The grapes were delivered to the winery at dawn and destemmed with all parcels fermented separately, the early parcel fermented with a traditional Sauvignon Blanc yeast and the remaining parcels with hybrid yeast to release and enhance varietal character. The wine was stored on yeast lees for 2 months to build mouth feel and texture then blended with only the best individual parcels selected.

COLOUR: Very pale green straw, green hue with brilliant clarity.

BOUQUET: Intensely aromatic gooseberry, lychee and paw paw with lifted hints of melon, all integrated with subtle passionfruit, pineapple and guava with nuances of citrus and cucumber.

PALATE: Lively and vibrant with intense fruit driven palate, citrus, gooseberry and tropical notes are supported by subtle grassiness. Balanced acidity with a soft voluptuous mouthfeel and fruit sweetness. Exceptional length and intensity.
