Dexter Wines is the project of Tod Dexter who has several decades winemaking experience in the Mornington Peninsula, most notably as head winemaker at Stoniers and then Yabby Lake. Suffice to say, Tod brings some real winemaking pedigree to his new venture which is reflected in the exceptional quality of his new Dexter releases. "95 Points. There’s a touch of volatility here, I think, that makes for a slightly edgy and interesting lead in to the smell of lemon, nectarine, citrus blossom and gentle spicy oak. It’s fine, tight and citrussy with an engaging dry flintiness and has a lightly smoothing gloss of cashew cream to balance it out. There’s a sort of lemon sherbet flavour (only not so sweet) on the finish that’s very attractive. It’s a stylish wine with Burgundian styling (sorry CM), and one for drinking rather than showing (off). And yes, I’m supposed to be tasting, but I kept drinking. A good sign that. It is then transferred into French oak barriques (20% New, 80% second, third and fourth use) and inoculated with a neutral yeast. Fermentation is relatively vigorous and complete within two weeks.From May until spring the barrels are stirred every two weeks until MLF is complete. The wine is left on lees until bottling with filtration in February, 10 months after harvest. Aromas of lemon, white peach, apple and pear combine with subtle oak. A good follow up to the 2006 and 2007 wines reflecting the favourable 2008 vintage conditions. Subtle flavours reflective of the aromas - particularly lemon, pear and elegant oak. Bright and clear colour; a fragrant red fruit bouquet, then a fresh and lively light-bodied palate, the red fruits surging through to a lingering finish with fine tannins. There’s a little smoky sulphide funk on show and then it’s all spice, red cherry and strawberry with some perfumed flowering basil. Clean, light to medium bodied and fresh with an effortless sort of gentle sophistication. Fine grained tannins provide a little grip and there’s a good clean finish and flavour that encourage the next sip. Deft, dexterous even - a thoroughly charming wine. "Hand picked fruit is destemmed without crushing and elevated into small open fermenters. The must is left un-inoculated for 2-3 days. When fermentation is observed cultured yeast is added. Fermentation temperatures peak at around 32°c and during fermentation the cap is plunged up to 3 times per day. 2-3 days after fermentation is complete, the must is gently pressed and transferred into French Oak bariques (25% New, 75% second third and fourth use) where it undergoes MLF before winter. The wine is racked once in the spring and put back to barrels for further ageing. It is racked again in January for bottling in February, 10 months after harvest. Nose: Plums and bright cherry and dark berry aromas with underlying nuances of earth, spices and subtle oak. Palate: More elegant than the 2007 yet retaining lovely palate structure. The flavours are similar to the aromas with fruit and oak in balance. The entry is soft and fills out in the middle palate with soft sweet fruit and fine tannins towards the lingering finish." - Tod Dexter.
