Paxton is a family owned and run McLaren Vale wine company; founder and owner, David Paxton, is one of Australia's most highly respected viticulturists; David's son Michael oversees the winemaking and second son, Ben, manages Cellar Door. Paxton vineyards are managed using biodynamic farming principles - farming without the use of synthetic fertilisers and pesticides with a focus on promoting healthy, living soils through natural compost preparations.
2013 harvest was characterised by small crops of early ripening, full flavoured fruit.One of our earliest harvests in recent times was fantastic due to great natural balance and ripeness at relatively low sugar levels, resulting in moderate alcohols.
Vinification: Made from 100% Shiraz grown specifically for this Rosé, fruit was crushed to a press, where it stayed in contact with the skins for 24 hours. After pressing, the wine was settled and fermented like a white wine, at cool temperatures. Approx. 5% was fermented in new French oak barrels. It was filtered and bottled early in its life to capture the freshness of Shiraz Rosé.- Paxton Wines.
