Paxton MV Shiraz 2011

McLaren Vale, South Australia   |    750ml   |    13.5%
Paxton is a family owned and run McLaren Vale wine company; founder and owner, David Paxton, is one of Australia's most highly respected viticulturists; David’s son Michael oversees the winemaking and second son, Ben, manages Cellar Door. Paxton vineyards are managed using biodynamic farming principles - farming without the use of synthetic fertilisers and pesticides with a focus on promoting healthy, living soils through natural compost preparations.

"The Paxton family’s extensive vineyard holdings in McLaren Vale produce a range of high quality wines at various price points. Their MV shiraz, sourced from biodynamic-in-conversion vineyards, delivers typically generous McLaren Vale flavours, combining bright fruit with a satisfying earthy, savoury undertone. It’s an amazingly good wine at the price. The fruit comes from four Paxton vineyards - Quandong Farm, Maslin Vineyard (near the coast), Jones Block and 19th Vineyard. The diversity of fruit sourcing, a range of winemaking techniques and maturation in a mix of French and American oak account for its completeness." - Chris Shanahan, http://chrisshanahan.com.

"David Paxton’s vineyards comprise of 6 Biodynamic properties. MV - McLaren Vale Shiraz - is a blend of Shiraz from four of the Paxton vineyards, and has been developed to highlight the best fruit flavours. The 2011 MV displays the hallmarks of classic McLaren Vale Shiraz - fruit, elegance, balance and pleasure in a bottle." - Paxton Wines.

"Numerous individual parcels from each vineyard were blended. The majority were de-stemmed with a portion of whole bunches in some batches. They were then transferred to individual open fermenters, where a regime of pumping over plunging and rack and returns was undertaken. After fermentation, the wine remained on skins until it had developed the complexity required. It was oak matured for an average of 12 months in a mix of new and old French and American oak" - Paxton Wines.
